Olmata has been created to give consumers in just one bottle, the full wine experience of the Casale Marittimo area. Being a blend of 40% of Sangiovese, and 30% each of Merlot and Cabernet Sauvignon it is a full reflection of what our vineyards seek to produce.
The three varieties of grapes are separately harvested; then, the fermentation and maceration of each variety is handled separately in the usual 50 hectoliters stainless steel tanks. Immediately following the pressing, the wines are placed for the aging, into 2nd and 3nd passage oak French barrels, where also the malolactic fermentation takes place, for about 12 months.
After bottled the wine ageing for another 12 months.
