Casalvecchio vinified in amphora
Since its first harvest in 2001, Casalvecchio has always been a pure Cabernet Sauvignon, with great personality, intense, enveloping, characterized by a good structure and a long evolution. Many have been the awards obtained over the years by this Cabernet that finds in the area of Casale M.mo a terrain of maximum expression.
After many years of satisfaction, knowing its great potential, we wanted to improve its peculiarity so we have vinified it in an 8 hl terracotta amphora without any coating, (therefore "raw").
The idea was born from the desire to create a wine at the same time innovative and extreme, harvesting a perfect cabernet and leaving it in maceration on the skins in the amphora for 8/10 months.
The periodic checks of its evolution are highlighting what we expected: a great natural oxygenation that keeps the fruit intact in its richness and that extracts the maximum complexity of the primary aromas. A great challenge for us, but also a great deal of care in this project that we believe will lead Casalvecchio to reach higher levels of quality and intensity.
