For at least 20 years, Cabernet has been regarded as the “prince of grapes” along the Tuscan coast.
In our vineyards we cultivate 1.5 hectares of Cabernet Sauvignon pruned on the Guyot system and head pruning, with a plant density of 5600 per hectare. The grapes for Casalvecchio grow up in the clay hills of Casale Marittimo, a few kilometers from the sea in an area with a high temperature difference between day and night. This is beneficial for the best polyphenolic ripening of the grapes. Our production is in the range of 5 tons per hectare.
At the winery, the macerations take 20-25 days at controlled temperatures. This emphasizes the qualities of the grapes from which we obtain an intense, complete and structured wine, with high potential to improve during ageing.
