In a “terroir” naturally suitable for red vines, partially to meet the challenge, and partially out of curiosity, in 2009 we started the production of a white wine.
Vermentino is undoubtedly the best grape to fulfil the potential for white wine along the Tuscan coast.
The 6000 trunks per hectare trained on Guyot method are carefully green pruned during the spring and protected with organic agriculture methods, to guarantee the absolute integrity of the clusters.
The harvest begins in the middle of September. After soft crushing and de -stemming we have a natural decantation of the refrigerated must which emphasizes the aromatic components of the grapes where floral and white fruit pulp suggestions dominate.
The fermentation takes place at a controlled temperature (16/18°C), after wich the wine ages for 3 months in stainless steel tanks and for another 3 months in the bottle.
